Wine description
40% Monastrell, 40% Syrah and 20% Garnacha tintorera elaborated as the friars did centuries ago, in concrete vats, recovering the ancestral traditions. It is 100% artisanal wine, from the harvest to the bottling, everything is done manually. The intervention at the winery is limited to a minimum. No sulphites are added.
Soils
This wine is a blend of different vineyards from the estate Casa Los Frailes at 650 meters altitude. The soils selected are the ones in most extreme conditions, very white calcareous soils, poor in iron and very low yields. Our aim is to get a Monastrell with the highest tannins content as the tannins can protect the wine against a possible oxidation due to the lack of sulphites. The vineyards, planted in several plots, aged from 1987, 1988, 1991 and 1992 being the average 25 year old in dry agriculture.
Vinification
The harvest is manual. Malolactic fermentation as well as the ageing is done in ancient concrete vats used by the Friars centuries ago. The intervention at the winery is limited to a minimum, indigenous yeast, no stabilized or filtered and no sulphites added.
